There are a lot of things to like about eggs: their bright and happy colors, rich and creamy yolk, versatility in cooking, and we can’t forget their quick cook-time.  However, eggs have been unfairly slandered by science in the past due to their high cholesterol content.  Hence, the introduction of egg white omelets and yolk-free fare that have dominated the breakfast plates and baked goods of health-conscious eaters for years now.

The science community begs your pardon, and wishes to enlighten you on the nutritious properties of the “incredible edible egg.”  The latest research shows that dietary cholesterol does NOT translate to high levels of blood cholesterol.  In fact the egg yolk, which has been demonized for so long, actually contains the good stuff, including the bulk of the egg’s iron, folate and vitamins.  In addition, egg yolks also contain two amazing nutrients- lutein and zeaxanthin- which support eye and brain health.
