Ingredients
  • 12 slices whole wheat bread
  • 1 pint fresh blueberries
  • 5 large eggs
  • 1 ¼ cup 1% milk
  • 2 tablespoons pure maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons unsalted butter, melted
Instructions
  1. In a 9x9-inch square baking dish, toss together cubed bread and fresh blueberries.
  2. In a medium-sized bowl, whisk together eggs, milk, maple syrup, cinnamon, and nutmeg. Add melted butter and mix to combine. Pour egg mixture over bread and blueberries. Cover and refrigerate overnight.
  3. Preheat oven to 350 degrees F. Bake in oven 45-55 minutes, or until set and golden brown. Serve with eggs or your favorite low-fat turkey sausage for a balanced breakfast!
