Creamy Mushroom Pork Chops

Ingredients
  • 6 (1/2- inch) center cut pork chops
  • ½ teaspoon each salt and pepper
  • 1 tablespoon olive oil
  • 1 cup orange juice
  • ¼ cup dry sherry
  • 1 (1 oz) envelope dry onion soup mix
  • 1 cup sliced fresh mushrooms
  • ¼ cup fat free half ‘n half
Instructions
  1. Sprinkle pork chops evenly with salt and pepper.
  2. Cook pork chops in hot oil in heavy skillet over medium-high heat for 2 minutes on each side.
  3. Add orange juice and next 3 ingredients; bring to a boil. Cover, reduce heat and simmer 15 minutes. Transfer chops to a serving platter. Reserve reduced orange juice mixture in skillet. Add fat free half ‘n half. Heat over low until just heated through – do not boil. Pour over pork chops and serve.
