Fireworks Potato Salad
Ingredients
  • 4 cups new potatoes (skin on), boiled and cut into large chunks
  • ¼ cup celery, diced
  • ¼ cup each red and orange bell pepper, diced
  • ½ cup green onion, diced (reserve half for garnish)
  • ⅓ cup olives, chopped
  • 1 jalapeno, seeded and diced (optional)
  • Freshly cracked black pepper to taste (optional)
  • ½ cup olive oil and vinegar dressing, your favorite
Instructions
  1. Combine all ingredients except dressing.
  2. Pour dressing over mixture and stir to blend together.
  3. Cover and refrigerate until ready to use.
  4. Sprinkle reserved green onion over salad before serving.
