Sriracha Spice Tuna Sliders

Ingredients
  • 2 (6 oz) packets albacore tuna
  • 2 eggs
  • 1 large potato, peeled, boiled, and mashed
  • ¼ cup onion, finely diced
  • ¼ cup red bell pepper, finely diced
  • 1 ½ tablespoons Sriracha sauce
  • ¼ teaspoon freshly ground black pepper
Sauce:
  • 1 tablespoon Sriracha sauce
  • ⅓ cup light mayonnaise
  • 1 cucumber, sliced
Instructions
  1. In large bowl, combine tuna, eggs, potato, onion, bell pepper and Sriracha sauce. Mix together and form into 2” wide, 1” thick patties to make a total of 12 patties; set aside.
  2. Heat grill to medium-high heat. Lightly brush grill surface with oil to prevent sticking. Sear patties 3-5 minutes, per side.
Optional: Top with Sriracha sauce (recipe below) and sliced cucumber.
Sauce:
  1. Combine Sriracha and mayo in a small bowl. Mix till well blended.
  2. Serve on top of Sriracha Tuna Patties & top with sliced cucumber.
