Ingredients
  • 1-1/2 lbs. chicken breast, cut into 1" cubes
  • 1-1/2 lbs. baby yellow potatoes, cut into ½" pieces
  • 2 red bell peppers, cut into 1" pieces
  • 1 cup onion, cut into 1" pieces
  • 3-4 garlic cloves, skin removed and cut in half (or 1-2 tsp minced garlic)
  • 3 Tbsp. olive oil
  • 2 tsp. paprika
  • 1-1/4 tsp. salt
  • 1 tsp. black pepper
  • ¼ tsp. red pepper flakes
  • 1 cup grated reduced-fat cheddar cheese
  • Handful of chopped fresh parsley
Instructions
  1. Preheat oven to 425 degrees F. Spray baking/casserole dish with cooking spray or rub with additional oil.
  2. Use a kitchen towel or paper towels to dry chicken and vegetables and absorb excess moisture. (Note: if liquid remains after cooking, drain excess)
  3. Place chicken, potatoes, red bell pepper, onion slices, and garlic into a large mixing bowl and drizzle with 3 Tbsp. oil.
  4. Add paprika, salt, pepper, and red pepper flakes and rub in with hands to evenly coat. Then transfer to the prepared baking dish.
  5. Place dish in oven and bake for 30-40 minutes, stirring once half-way through.
  6. Remove from oven and sprinkle with cheese. Turn oven to broil and cook for additional 2-3 minutes until cheese is melted.
  7. Sprinkle with chopped parsley and serve.
