Ingredients
  • 1 uncooked, prepared whole wheat pizza dough (as seen at Trader Joes)
  • 1 cup part-skim mozzarella cheese, shredded
  • ½ cup Parmesan cheese, shredded
  • ½ cup red onion, chopped
  • ½ medium zucchini squash, sliced and halved
  • ½ cup orange bell pepper, diced
  • ½ cup yellow bell pepper, diced
  • ½ cup cherry or grape tomatoes, halved
  • ½ Tbsp. extra-virgin olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons corn meal
  • ½ cup prepared pizza sauce
  • 6 slices Canadian bacon, chopped
  • Fresh basil, for garnish
Instructions
  1. Place a pizza stone (or a cookie sheet lined with aluminum foil) in the oven, and preheat to 450°F.
  2. Meanwhile, place chopped vegetables in bowl, toss with olive oil until evenly coated, and sprinkle with a pinch of salt and black pepper. Set aside.
  3. On a well-floured surface, roll out the pizza dough to 12-inches in diameter. Remove hot pizza stone or cookie sheet from the oven and sprinkle with corn meal. Place pizza dough on the stone or cookie sheet and spread pizza sauce evenly over the top, leaving a 1-inch border for the crust. Top with shredded cheeses, chopped vegetables, and Canadian bacon.
  4. Bake in the oven for 8-10 minutes, until crust is golden-brown. Garnish with fresh basil and slice into 12 pieces. Enjoy!
