Crispy Cornflake Chicken
Ingredients
- 4 chicken breast halves, pounded to even thickness
- 2 cups cornflakes
- ¼ cup butter
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Sprinkle chicken evenly with salt and pepper; set aside.
- Place cornflakes in plastic zip-lock bag. Crush gently with rolling pin: set aside.
- Melt butter in microwave-safe bowl. Dip chicken then place one at a time into bag with cornflake mixture. Shake gently and place in a 9X13-inch Pyrex dish.
- Sprinkle remaining cornflakes from bag over chicken.
- Bake uncovered at 375 degrees for 30 minutes or until chicken is tender.
