Roasted Salmon with Avocado-Grapefruit Salsa

Ingredients
  • 4 (4 oz) salmon fillets
  • 2 teaspoons olive oil
  • ½ teaspoon each salt and pepper
  • 1 teaspoon chile powder (Ancho preferred)
  • 1 large grapefruit
  • 1 small avocado, pitted, peeled and cubed
  • ½-1 jalapeno, seeded and minced
  • 2 tablespoons red onion, minced
  • 2 tablespoons cilantro, minced
  • 1 tablespoon fresh lime juice
Instructions
  1. Preheat oven to 400 degrees. In glass baking dish, place the salmon skin-side down.. Brush top with olive oil. Sprinkle with salt, pepper, and ancho chile powder. Place in the oven and roast until almost opaque in the center, about 12-15 minutes.
  2. Meanwhile, using a sharp knife, cut off the peel and all of the white pith from all around the grapefruit. Working over a small bowl, use the knife to cut between the membranes to release the grapefruit segments into the bowl.
  3. Squeeze the juice from the membranes into the bowl. Remove the grapefruit segments from the bowl and cut crosswise into ½-inch pieces; return to the bowl.
  4. Gently mix in the avocado, jalapeno, onion, cilantro, and lime juice.
  5. Place salmon fillets on serving plate. Spoon the salsa over salmon and serve.
