Dark Chocolate Avocado Truffles

Ingredients
  • 6 ounces extra dark chocolate chips (70% cocoa if possible)
  • ⅓ cup mash avocado
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional: cocoa powder, for rolling
Instructions
  1. In medium glass bowl, combine the chocolate chips, vanilla extract and pinch of salt. Microwave on high 30 seconds. Stir, and microwave an additional 15 seconds or until almost melted. Stir until smooth. Mash the avocado with a fork until no lumps are visible, then stir into the melted chocolate mixture until smooth and thickened. Place in the refrigerator to set for 20 minutes, or until slightly firm to the touch.
  2. Remove mixture from the refrigerator and use a tablespoon to form chocolate into 12 balls. Place them on a pan lined with parchment paper and roll the balls between the palms of your hands to create a smooth surface, working quickly.
  3. If desired, place 2 tablespoons cocoa powder in small bowl and roll each truffle to coat. Serve at room temperature and store in the refrigerator.
