Ingredients
  • 4 boneless skinless chicken breasts (about 2 pounds)
  • ¾ cup barbecue sauce
  • 1 (20-ounce) can pineapple slices, in juice
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon minced garlic
  • 1 red bell pepper, sliced
  • 1 medium zucchini, halved and sliced
  • 1 small red onion, sliced
  • 1 bunch cilantro, for garnish
Instructions
  1. Set grill to medium heat. Cut 4 sheets of heavy duty aluminum foil large enough to wrap chicken and veggies inside. In each packet, place chicken in the center, evenly divide the veggies, and add 2 pineapple slices.
  2. In a small bowl, whisk together barbecue sauce, half the juice from the can of pineapple slices (about ¾ cup), soy sauce, and garlic. Add 2-3 tablespoons of sauce on the chicken and reserve about ¼ cup for later. Wrap up the foil into closed packets.
  3. Place chicken packets on grill and cook for about 15 minutes, flipping halfway through.
  4. To serve, carefully open packets, baste with reserve sauce and top with fresh cilantro.
