Ingredients
  • 1 ¼ pound 96% lean ground beef
  • 1 egg
  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground red pepper
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons fresh Italian parsley, roughly chopped
  • 1 medium red bell pepper, finely diced
  • 1 Uncle Ben's Natural Brown Rice Cup (4.4 ounce), prepared
  • Non-stick cooking spray
  • 3 cups prepared marinara sauce*
  • *we used Muir Glen Cabernet Marinara Sauce
Instructions
  1. In a large bowl, combine first eleven ingredients. Divide and shape the combined mixture into 12 meatballs. In a large skillet, using non-stick cooking spray, brown meatballs in batches until brown on all sides. Set aside until all meatballs are seared.
  2. Preheat oven to 375. In a large glass baking dish, spread 1 cup of marinara sauce. Place the partially cooked meatballs in baking dish and top with additional 1 cup of marinara. Cover with foil and bake for 35-40 minutes or until meatballs reach an internal temperature of 165 degrees.
  3. Heat remaining 1 cup of sauce and serve with meatballs, if desired.
