Cowboy Beef & Beans

Ingredients
  • 3 pound rump roast, trimmed of all visible fat
  • 1 teaspoon garlic salt
  • ½ teaspoon pepper
  • 2 cups dried pinto beans
  • 1 cup water
  • 1 (10.75 oz)can low sodium beef broth
  • 1 (10 oz)can Ro-Tel
  • 1 (8 oz) can tomato sauce
  • 1 (4.5 oz)can green chilies
  • 1 onion, chopped
Instructions
  1. Sprinkle roast with garlic salt and pepper.
  2. Put 2 cups dry pinto beans around roast. Add remaining ingredients.
  3. Cover and bake at 250 degrees for 10 to 12 hours, or place roast in crockpot, add remaining ingredients and cook on low overnight or for 8-10 hours
