Apple Salad with Pecan & Feta Crumbles

Ingredients
  • 2 heads red leaf lettuce, torn
  • 1 apple, chopped
  • ½ pound reduced fat feta cheese, crumbled
  • SPICED PECANS:
  • ¾ cup pecan pieces
  • 1 teaspoon cayenne pepper
  • 3 tablespoons melted butter
  • Dash hot pepper sauce
  • DRESSING:
  • 2 tablespoons wine vinegar
  • 1 tablespoon + 1 teaspoon Dijon mustard
  • ⅓ cup olive oil
  • Fresh cracked black pepper, optional
Instructions
  1. In large bowl, combine leaf lettuce and apple. Top with feta cheese crumbles and place in refrigerator.
  2. To prepare spiced pecans: in small bowl, combine pecans, cayenne pepper, melted butter and pepper sauce. Spread on ungreased baking sheet and bake for 10 minutes at 350 degrees – watch carefully to avoid burning. Set aside to cool.
  3. To prepare dressing: In small bowl, whisk together vinegar, mustard and gradually add oil. Add pepper to taste.
  4. Just before serving, toss salad with dressing and pecans.
