Citrus Salad with Black Beans and Feta Crumbles

Ingredients
  • 12 cups romaine lettuce, chopped
  • 1½ cup radishes, sliced
  • 2 cups canned black beans, rinsed & drained
  • 2 oranges, segmented
  • 2 green onions, sliced
  • ½ cup crumbled reduced-fat feta cheese
  • ½ cup Orange-Oregano Dressing
  • Orange-Oregano Dressing
  • ½ teaspoon orange zest, freshly grated
  • ½ cup orange juice, preferably freshly squeezed
  • ¼ cup cider vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1½ teaspoons fresh oregano, chopped, or ⅓ teaspoon dried
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
Instructions
  1. Combine lettuce, radishes, beans, orange segments, green onions, feta crumbles in a large bowl and toss.
  2. Place all dressing ingredients in a jar. Cover and shake to combine.
  3. Add dressing and toss to coat. Divide onto 4 plates and serve.
