Italian Chicken with Peppers & Olives

Ingredients
  • 8 skinless bone-in chicken breasts
  • 3 tablespoons canola oil for cooking
  • 4-5 garlic cloves, crushed
  • 4 oz. Kalamata olives
  • 6 oz pepperoncini’s (save juice)
  • 4 oz. sun dried tomatoes
Instructions
  1. Brown chicken in olive oil, and garlic. Add remaining ingredients and about ⅓ juice from both olives and pepperoncini.
  2. Place in oven at 350 degree for one hour, covered.
  3. Serve over whole wheat angel-hair pasta, if desired.
