Maple-Balsamic Chicken Breast

Ingredients
  • 4 (5 oz) skinless, boneless chicken breast halves
  • ½ teaspoon each salt, paprika and dried thyme leaves
  • 1 tablespoon olive oil
  • 1 (14½ -ounce) can low-sodium chicken broth
  • ⅓ cup maple syrup
  • ⅓ cup balsamic vinegar
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground red pepper
  • 3 tablespoons chunky peanut butter
Instructions
  1. Sprinkle chicken evenly with salt, paprika, and thyme leaves.
  2. Cook chicken in hot oil in a large non-stick skillet over medium-high heat 2 minutes on each side or until golden brown. Stir in chicken broth, maple syrup, black and red pepper and bring to a boil. Cover, reduce heat to low, and simmer 15 minutes. Remove chicken to a serving platter, and keep warm. Reserve liquid in skillet.
  3. Whisk peanut butter into reserved liquid, and boil over medium-high heat, uncovered, 5 minutes or until sauce is thickened; spoon sauce evenly over chicken.
