White Lightning Texas Chili
Ingredients
  • 3 skinless boneless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 1 (4 oz) can diced green chilies
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon each cumin and garlic salt
  • ½ teaspoon ground oregano
  • ⅛ teaspoon cayenne pepper
  • 2 (16 oz) can navy beans, drained & rinsed
  • Optional Toppings:
  • Pepper Jack cheese shreds
  • Chopped green onion
Instructions
  1. Place chicken breasts in bottom of crock pot. Add chicken broth, onion, green chilies, tomatoes, seasonings and cook on low for 4 hours.
  2. Add beans and cook additional hours or until ready to serve. Adjust salt to taste.
  3. Top each serving with cheese and green onion, if desired.
