Ingredients
  • 4 skinless, boneless chicken breasts
  • 16 cubes low-fat cheddar cheese
  • 32 slices jalapenos
  • 8 slices center cut bacon, cut in half
  • 1 cup light Italian Vinaigrette
Instructions
  1. Preheat oven to 350 degrees. Cut each chicken breast into quarters. Using sharp knife, butterfly each piece.
  2. Stuff with one cube of cheese and 2 jalapeno slices. Wrap half-slice of bacon around the chicken and secure with toothpick.
  3. Place chicken in large baking dish and cover with Italian vinaigrette; allow to marinate for 20 to 30 minutes.
  4. Remove from marinade and place on large jelly roll baking sheet (cookie sheet with sides). Bake for 40 to 45 minutes or may be grilled on outdoor grill over high heat for about 20 minutes.
