Sugar Cookies
Ingredients
  • ½ cup butter, softened
  • 1 cup Granulated Sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
Instructions
  1. With electric mixer, cream butter and sugar until light and fluffy. Beat in egg, lemon juice and vanilla.
  2. Combine dry ingredients; gradually beat into butter mixture until well blended.
  3. Divide dough in half; flatten into a 1-inch disc and wrap in plastic wrap. Refrigerate until firm, 2 hours or longer.
  4. Heat oven to 375 F. On a floured surface roll dough ⅛ inch thick. Cut with festive cookie cutters. Place on ungreased cookie sheets. Bake 8-10 min. until lightly browned around edges. Cool on rack.

Makes 4 dozen (1 cookie + icing per serving) Icing: 2 cups powdered sugar 1 tablespoon butter, melted 2 tablespoons milk ⅛ teaspoon coconut extract Tint with your choice of food coloring Spread icing and decorate with colored sugar, candies, etc. Leave out on waxed paper until icing dries – at least 3 hours. Then place in single layers in air-tight container. Separate each layer with waxed paper.
