Pumpkin Squares

Ingredients
  • Crust:
  • 1 cup flour
  • ½ cup brown sugar
  • ½ cup quick oats
  • ½ cup butter
Filling:
  • 1 (16 oz) can pumpkin
  • 1 (13.5 oz) can evaporated skim milk
  • ¾ cup sugar
  • 2 eggs
  • ½ teaspoon each salt and ground ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cloves
  • Topping:
  • ½ cup chopped pecans
  • ½ cup brown sugar
  • 2 tablespoons butter
  • Instructions
    Crust:

  • Combine ingredients in small mixing bowl; mix until crumbly. Press into ungreased 13X9-inch baking dish. Bake at 350 degrees for 20 minutes. During bake time, prepare filling.
  • Filling:
  • Combine ingredients in large mixing bowl; beat well. Pour pumpkin mixture into baked crust and bake at 350 degrees for 20 minutes.
  • Remove from oven and sprinkle with topping.
  • Topping:
  • Stir together ingredients. Sprinkle over filling.
  • Return to oven for 15-20 minutes until filling is set.
  • Cool and cut into squares. Serve with whipped cream, if desired.
