Apple Cake with Brown Sugar Glaze
Ingredients
  • 2 cups sugar
  • 1 cup canola oil
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups peeled, finely chopped cooking apples
  • ½ cup chopped pecans
Instructions
  1. Beat first 3 ingredients at medium speed of an electric mixer until creamy.
  2. Combine flour and next 3 ingredients; add to sugar mixture, beating well.
  3. Stir in apples and pecans.
  4. Pour batter into greased and floured 12-cup Bundt pan.
  5. Bake at 350 degrees for 1 hour and 20 minutes or until wooden pick inserted in center comes out clean.
  6. Cool in pan on wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.
  7. Drizzle Brown Sugar Glaze over cake.
