Easy Skillet Tacos

Ingredients
  • 1 pound extra lean ground beef
  • ½ cup finely chopped onion
  • 1 tablespoon chili powder
  • 1½ teaspoons groun cumin
  • 1 teaspoon salt
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 1 (8 oz) can tomato sauce
  • ¾ cup water
  • ½ cup salsa
  • 1½ cups shredded 2% milk Cheddar cheese shreds
  • 1 tablespoon chopped fresh cilantro
  • 12 corn tortillas
  • Additional toppings: shredded lettuce, diced tomato,
  • avocado, salsa & jalapenos, optional
Instructions
  1. In large skillet, cook ground beef over medium-high heat, stirring
  2. until beef crumbles and is no longer pink. Add onion, chili powder,
  3. cumin and salt. Cook over low heat, stirring to prevent sticking,
  4. for about 15 minutes.
  5. Stir in beans, tomato sauce, water, and salsa. Mash pinto beans
  6. in skillet with a fork, leaving some beans whole. Bring to a boil;
  7. reduce heat and simmer uncovered for 10 minutes or until liquid is
  8. reduced.
  9. Top evenly with cheese and cilantro. Cover, turn off heat, and
  10. let stand 5 minutes or until cheese is melted. Serve with corn
  11. tortillas and desired toppings.
