Cheesecake Filled Strawberries

Ingredients
  • 4 ounces low-fat cream cheese
  • ¼ cup confectioners’ sugar
  • 1 teaspoons vanilla extract
  • 12 large strawberries
  • 2 tablespoons graham cracker crumbs
  • 2 ounces semisweet chocolate
Instructions
  1. Line baking sheet with waxed paper.
  2. Beat together cream cheese, confectioners’ sugar and vanilla extract in a bowl until smooth.
  3. With paring knife, cut off strawberry stems. On the stem side, cut around the inside of the strawberry to hollow out the center.
  4. Spoon mixture into a piping bag with a round tip. Pipe about 1 tablespoon of cream cheese filling into each strawberry.
  5. Sprinkle graham cracker crumbs over top of strawberries.
  6. Melt chocolate in microwave-safe bowl in 30 second intervals for 2-3 minutes, stirring after each interval.
  7. Dip the tips of strawberries into melted chocolate and place on prepared baking sheet. Refrigerate until set.
