Fall Produce is Nutrient-Rich

Fall produce like pumpkins, acorn squash and sweet potatoes are super rich in beta-carotene.  Your body converts beta-carotene into Vitamin A which has antioxidant properties that neutralize free radicals in the body that cause tissue and cellular damage.  Vitamin A is important for maintaining a healthy immune system.
