Ingredients
  • 1 lb. pork sausage (spicy or regular)
  • 8 eggs
  • 8 slices whole wheat bread, crusts removed, cut into ½ inch squares
  • 2 tablespoons butter, cut into ¼ inch squares
  • 2 cups milk
  • 2 (4.5 oz.) cans green chiles, drained and chopped
  • 1 cup low-fat sharp cheddar cheese, shredded
  • Salt and pepper to taste
Instructions
  1. In medium skillet, brown and crumble sausage over medium high heat. Drain oil.
  2. In a large bowl, beat eggs slightly and add bread, butter, milk, chiles, cheese, salt, pepper and cooked sausage. Mix and pour into greased 9x13-inch baking dish.
  3. Refrigerate, covered, at least 1 hour or overnight. Bake uncovered at 300 degrees for 1 hour, until puffed and golden.
Notes
To make this recipe:

Lower total fat & higher protein - use turkey or chicken sausage
Lower saturated fat - use oil instead of butter
