Ingredients
- 1 lb. pork sausage (spicy or regular)
- 8 eggs
- 8 slices whole wheat bread, crusts removed, cut into ½ inch squares
- 2 tablespoons butter, cut into ¼ inch squares
- 2 cups milk
- 2 (4.5 oz.) cans green chiles, drained and chopped
- 1 cup low-fat sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- In medium skillet, brown and crumble sausage over medium high heat. Drain oil.
- In a large bowl, beat eggs slightly and add bread, butter, milk, chiles, cheese, salt, pepper and cooked sausage. Mix and pour into greased 9x13-inch baking dish.
- Refrigerate, covered, at least 1 hour or overnight. Bake uncovered at 300 degrees for 1 hour, until puffed and golden.
