Texas Beef Skillet
Serves: 8
 
Ingredients
  • 1½ pounds 95% lean ground beef
  • 1 can (10-15 oz) tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (11 oz) sweet corn, drained and rinsed
  • 1 cup brown rice, cooked
  • ¼ cup water
  • ½ teaspoon each salt, pepper, and garlic powder
  • 1 teaspoon chili powder
  • Optional: shredded cheese, sour cream, diced onion, and/or cilantro
Instructions
  1. In a large skillet, brown the ground beef; and drain the excess fat.
  2. Stir in tomatoes, black beans, corn, brown rice, water and seasonings. Bring to a boil, reduce heat and simmer 2-3 minutes, until heated through.
  3. Top with optional toppings of choice.
