Texas Beef Skillet
- 1½ pounds 95% lean ground beef
- 1 can (10-15 oz) tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (11 oz) sweet corn, drained and rinsed
- 1 cup brown rice, cooked
- ¼ cup water
- ½ teaspoon each salt, pepper, and garlic powder
- 1 teaspoon chili powder
- Optional: shredded cheese, sour cream, diced onion, and/or cilantro
- In a large skillet, brown the ground beef; and drain the excess fat.
- Stir in tomatoes, black beans, corn, brown rice, water and seasonings. Bring to a boil, reduce heat and simmer 2-3 minutes, until heated through.
- Top with optional toppings of choice.
