In a large bowl, beat eggs. Add quinoa along with the rest of ingredients and mix until combined. Let mixture rest for a few minutes in order to allow breadcrumbs to soak up moisture.
Form 2-inch patties*
Place patties in heated skillet. Cover and cook for 7-10 minutes or until the bottoms are deeply browned. Carefully flip patties and cook an additional 5 minutes. Remove patties from skillet at let cool a few minutes before serving.
Notes
*If mixture is too wet to form patties, add more breadcrumb. Alternatively, if mixture crumbles, add water a few drops at a time.
