Slow Cooker Smoky Sweet Potato Chili

If you want a non-vegetarian version, brown 1 pound of lean ground beef or turkey in a skillet on the stovetop on medium heat. Drain and add to cooked chili.
Ingredients
  • 2 cans (15.5-ounce) no salt added black beans, drained and rinsed
  • 1 (9-ounce) medium sweet potato, washed and diced into ¼-inch cubes
  • 1 (28-ounce) can diced tomatoes, no added salt
  • ½ medium onion, finely chopped
  • 1 red bell pepper, seeded and diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • ½ cup water
  • 1 small jalapeno, seeded and minced (optional)
  • 1 teaspoon chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • ¼ teaspoon kosher salt
  • Toppings (optional): avocado slices, chopped cilantro, plain greek yogurt or sour cream
Instructions
  1. Combine all ingredients in slow cooker and stir. Set to low, cover, and cook for 3-4 hours. Serve with toppings of your choice.
