Simple Summer Pasta Salad

Ingredients
  • 8 ounces dry pasta*
  • 1 small yellow bell pepper, seeds removed and diced
  • 1 small red bell pepper, seeds removed and diced
  • 1 large seedless cucumber, sliced and halved
  • 1 cup grape tomatoes, halved
  • ½ small red onion, diced
  • ¼ cup sliced black olives
  • ½ cup Italian dressing
  • ½ cup crumbled feta cheese
  • ¼ cup fresh basil, finely chopped
  • Salt and black pepper, to taste
Instructions
  1. Cook pasta according to package instructions. Drain pasta and rinse with cold water to cool. Allow pasta to reach room temperature before combining with vegetables.
  2. In a large bowl, combine pasta, bell peppers, cucumbers, tomatoes, red onion and black olives. Pour the Italian dressing over the pasta salad and gently stir to combine. Add the feta cheese and fresh basil and gently stir again. Season with salt and pepper to taste. Cover and chill in refrigerator until ready to serve. *For additional protein and/or fiber, try using Banza, Barilla ProteinPLUS, Bentilia or Ancient Grains POW pastas.
