1 (14-ounce) jar artichoke hearts, drained and roughly chopped
½ (12-ounce) jar roasted red pepper, drained and chopped
⅓ cup toasted pine nuts
1½ pounds cooked medium-sized shrimp
Zesty Red Wine Vinaigrette:
⅓ cup grated Parmesan cheese
¼ cup olive oil
¼ cup red wine vinegar
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
Instructions
Layer all salad ingredients in a large salad bowl.
Combine all vinaigrette ingredients in a mason jar, and shake until combined. (Or whisk together in a bowl). Pour over salad and toss to combine. Enjoy immediately!
