Apple Cabbage Slaw

Ingredients
Slaw:
  • 1 head (approximately 8 cups) Napa cabbage, shredded
  • 1 Red Delicious apple, julienned
  • 1 green onion, thinly sliced
  • 2 Tbsp cilantro, chopped
  • ¼ cup almonds, sliced
  • 2 Tbsp hemp seeds, raw
  • ½ tsp salt
  • ¼ tsp fresh ground black pepper
Dressing:
  • ⅓ cup extra virgin olive oil
  • ¼ cup rice vinegar
  • 2 Tbsp tamari
  • 1 Tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tsp honey
Instructions
  1. Combine all salad ingredients into a large bowl, toss together, set aside.
  2. In a small bowl, whisk together all of the dressing ingredients until well blended.
  3. Pour dressing over salad mixture, toss, and serve.
