Ham and Cheese Gnocchi

Ingredients
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 (16-ounce) package potato gnocchi
  • 1 (.5-ounce) package baby spinach
  • 1 pound low-sodium ham, cubed
  • 1 cup frozen peas
  • 1 ½ cups low-sodium chicken broth
  • ¼ cup half & half
  • ½ teaspoon black pepper
  • 1 cup part-skim mozzarella cheese, shredded
  • ¾ cup white cheddar cheese, shredded
Instructions
  1. Preheat oven broiler.
  2. In a large, oven-proof skillet heat olive oil over medium-high heat. Add onion and sauté 2-3 minutes, until fragrant. Add gnocchi and sauté until lightly browned and plump, about 5 minutes. Add spinach, ham and peas, and sauté for 2-3 minutes, until spinach has wilted.
  3. Add chicken broth and half & half to skillet. Season with black pepper. Stir to combine and bring to a low boil. Sauce will thicken slightly. Turn off heat.
  4. Sprinkle cheeses over the top, and place under broiler. Watching closely, broil for 3-5 minutes, until top is browned and cheese is gooey. Serve immediately.
