Zesty Homemade Hamburger Helper

Ingredients
  • 3 cups whole wheat elbow pasta
  • 1 tablespoon olive oil
  • ½ cup white onion, chopped
  • 1 clove garlic, minced
  • 1 pound 93% lean ground beef
  • ½ teaspoon salt
  • 1 teaspoon black pepper, oregano, chili powder, and paprika
  • ¼ teaspoon cayenne pepper (optional)
  • 2 cups low-fat Mootopia or Fair Life milk
  • 2 cups cheddar cheese, shredded
  • Fresh parsley for garnish
Instructions
  1. Bring a large pot of water to a boil. Add pasta and boil for 5 minutes (pasta should still have a bite to it). Drain and set aside.
  2. Meanwhile, heat olive oil in a large, non-stick skillet over medium-high heat. Add onion and garlic and sauté for about 2 minutes, until fragrant. Add ground beef, salt, and spices. Stirring occasionally, brown beef until nearly cooked through. Reduce heat to low, then stir in pasta and milk. Cover and allow to lightly simmer for 5-10 minutes, stirring occasionally, until pasta is cooked through. (Avoid boiling because the milk will curdle).
  3. Fold in shredded cheese, stirring until cheese is completely melted. Garnish with fresh parsley, serve and enjoy!
