Citrus Salad with Black Beans and Feta Crumbles
- 12 cups romaine lettuce, chopped
- 1½ cup radishes, sliced
- 2 cups canned black beans, rinsed & drained
- 2 oranges, segmented
- 2 green onions, sliced
- ½ cup crumbled reduced-fat feta cheese
- ½ cup Orange-Oregano Dressing
- Orange-Oregano Dressing
- ½ teaspoon orange zest, freshly grated
- ½ cup orange juice, preferably freshly squeezed
- ¼ cup cider vinegar
- 1 tablespoon extra-virgin olive oil
- 1½ teaspoons fresh oregano, chopped, or ⅓ teaspoon dried
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ½ teaspoon freshly ground pepper
- Combine lettuce, radishes, beans, orange segments, green onions, feta crumbles in a large bowl and toss.
- Place all dressing ingredients in a jar. Cover and shake to combine.
- Add dressing and toss to coat. Divide onto 4 plates and serve.
Makes 4 servings (approximately 4 cups each)
