Preheat oven to 375 degrees F. In a large bowl, toss together cauliflower florets and olive oil. Arrange florets in a 9x11-inch baking dish and sprinkle with salt and black pepper. Bake for 15 minutes.
Remove from oven and sprinkle minced garlic, gorgonzola, and breadcrumbs over the top. Bake for an additional 7-10 minutes. Enjoy!
