Meanwhile, trim beef medallions of excess fat & dress with remaining 1 teaspoon olive oil, salt & pepper. Place steaks on a foil-lined broiler pan coated with cooking spray. Broil steaks 5 inches from the heat for 4 minutes, & turn over. Broil for 4-5 minutes more. Remove from oven & sprinkle steaks with blue cheese crumbles. Return steaks to oven & broil an additional 1-2 minutes, or until cheese is bubbly.
