Spicy Chocolate Chili

Ingredients
  • 2 teaspoons olive oil
  • 1 large yellow onion, chopped
  • 1 clove garlic, minced
  • 1 large red bell pepper, chopped
  • 1 ½ pounds 93% lean ground beef
  • 3 tablespoons dark brown sugar
  • 3 tablespoons chili powder
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon ground cumin
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon salt
  • ½ teaspoon fresh ground black pepper
  • 2 (15-ounce) cans pinto beans, rinsed & drained
  • 2 (14.5-ounce) cans diced tomatoes
  • 2 cups low-sodium beef broth
  • 2 ounces unsweetened chocolate, chopped
  • ½ cup light sour cream
  • ½ cup chopped green onions
Instructions
  1. Heat a large Dutch oven or soup pot over medium-high heat. Add olive oil, onion, garlic, bell pepper, & ground beef. Sauté 8-10 minutes, or until beef is browned.
  2. Add to pot brown sugar & the following 9 ingredients (through beef broth). Stirring to combine & bring to a boil. Reduce heat. Cover & simmer 15-20 minutes, or until slightly thickened, stirring occasionally.
  3. Add chopped chocolate, stirring to melt. Ladle into soup bowls & top with sour cream. Garnish with green onions.
