Delightful Baked Apples

Ingredients
  • 4 large Fuji or honey crisp apples
  • 4 teaspoons butter, unsalted
  • ½ cup old-fashioned rolled oats
  • ¼ cup dark brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 2 tablespoons pecans, chopped
  • ¾ teaspoon cinnamon
  • ¼ teaspoon allspice
  • 1 tablespoon canola oil
  • 4 cups vanilla Greek yogurt
Instructions
  1. Preheat oven to 350 degrees F. Using a paring knife and spoon, or melon baller, carve out & discard each apple core. (Be careful not to puncture the bottom). Portion 1 teaspoon butter in bottom of each apple core. Set aside.
  2. In a small mixing bowl, combine oats, brown sugar, flour, pecans, cinnamon, allspice & canola oil. Divide mixture between the 4 apples, firmly packing into each core.
  3. Place apples in a 9”x9” pan & bake uncovered for 35 minutes. Cover with aluminum foil and bake an additional 25-30 minutes, or until apple skin starts to wrinkle.
  4. Once removed from oven, slice apples in half. Serve hot with a dollop of Greek yogurt.
