Oven Baked Fajitas

Just in time for "Back to School," this is a kid-friendly, no-hassle version of everyone's favorite comfort food.
Ingredients
  • 1 pound boneless, skinless chicken breast, cut into strips.
  • 1 red onion, sliced
  • 1 x 15 oz can diced tomatoes with green chilies
  • 1 green bell pepper, sliced
  • 1 red, yellow, or orange bell pepper, sliced
  • 1 Tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
Instructions
  1. Preheat oven to 400⁰ F. On a cookie sheet, toss to combine sliced red onion, bell peppers, tomatoes & chicken.
  2. In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, & salt. Drizzle oil mixture over chicken & toss to coat.
  3. Evenly spread chicken mixture over cookie sheet. Bake uncovered 20-25 minutes, or until chicken is done. Serve with warm tortillas and your favorite toppings!
