½ teaspoon each salt, fresh cracked black pepper and sugar
Instructions
In medium Dutch oven, heat olive oil over low heat. Add onion and cook until translucent.
Prepare squash by cutting lengthwise into quarters, then slice into ½-1-inch slices. Add to Dutch oven, combine with onion and sauté over medium heat for 2 minutes. Add ½ cup water, place lid on top and simmer for 5-7 minutes or until squash is tender. Add more water as necessary.
Season with salt, pepper and sugar (my grandmother always said it really pops the flavor and she was right!) Drain any excess liquid and serve.
