Zesty Skillet Quinoa

Ingredients
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 jalapeno, minced
  • 1 (8.8oz) package microwavable red and white quinoa
  • 1 (15oz) can black beans, drained and rinsed
  • 1 (14.5oz) can diced tomatoes with green chilies
  • 1 cup corn kernels, fresh or frozen
  • 1 teaspoon each chili powder cumin
  • ½ teaspoon each salt and fresh ground black pepper
  • 1 avocado, peeled, and cubed
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro leaves
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and jalapeno to pan and stir frequently until fragrant (about 1 minute).
  3. Microwave quinoa according to package directions. Stir in quinoa, beans, tomatoes, corn, chili powder, and cumin.
  4. Heat through, stir in lime juice, salt and pepper.
  5. Garnish with avocado and cilantro.
