Zesty Skillet Quinoa

- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 jalapeno, minced
- 1 (8.8oz) package microwavable red and white quinoa
- 1 (15oz) can black beans, drained and rinsed
- 1 (14.5oz) can diced tomatoes with green chilies
- 1 cup corn kernels, fresh or frozen
- 1 teaspoon each chili powder cumin
- ½ teaspoon each salt and fresh ground black pepper
- 1 avocado, peeled, and cubed
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro leaves
- Heat olive oil in a large skillet over medium heat.
- Add garlic and jalapeno to pan and stir frequently until fragrant (about 1 minute).
- Microwave quinoa according to package directions. Stir in quinoa, beans, tomatoes, corn, chili powder, and cumin.
- Heat through, stir in lime juice, salt and pepper.
- Garnish with avocado and cilantro.
