Place chicken in Pyrex baking dish, sprinkle with 1 teaspoon of seasoned salt. Add 1 cup of water; cover with foil and bake at 350 degrees for 40 minutes. Remove from oven; uncover and allow chicken to cool.
Cut chicken into bite-size pieces. Combine chicken, apple, celery, and almonds in a large bowl; set aside.
Combine yogurt, mayonnaise, honey, lemon juice, ¼ teaspoon salt, and white pepper in a small bowl, stir well. Add to chicken mixture and toss well. Cover and chill. Serve on lettuce leaves, if desired.
