Grilled Sausage & Popper Skewers

Ingredients
  • 18 Jalapenos
  • 1 (8oz) fat-free cream cheese, softened
  • ⅔ cup reduced-fat Mexican cheese shreds
  • 2 green onions green onions, chopped
  • 1 teaspoon garlic powder
  • 2 pkg (12 oz) fully-cooked chicken or turkey sausage links
Instructions
  1. Using a pairing knife, cut off the tops of the jalapenos. Carefully remove the inside ribs and seeds.
  2. In a small bowl, mix together cream cheese, shredded cheese, green onions and garlic powder. Spoon cheese mixture evenly into each hollowed out jalapeno.
  3. Cut sausage into 2 inch pieces. On a shish kabob skewer thread sausage and jalapenos (width wise).
  4. Heat grill to medium-high heat. Cover grill with foil and place shish kabobs on heated grill. Cook on 3-5 minutes on each side until peppers begin to blister. Serve immediately.
