Hatch Green Chili Scramble
- 1 tablespoon butter
- 1 cup diced red (new) potatoes
- ¼ cup diced onion
- ½ cups sliced fresh mushrooms
- 1 cup diced lean ham
- ¼ cup diced fresh roasted Hatch green chiles
- 1 cup fresh baby spinach
- 6 eggs, slightly beaten
- ¼ teaspoon salt and pepper
- 1 cup low-fat pepper jack cheese
- Salsa, optional
- In large non-stick skillet, melt butter over medium heat. Add potatoes, and brown in skillet for about 5 minutes. Add onion and mushrooms and cook for an additional 5 minutes or until all vegetables are tender.
- Add ham, green chiles, and spinach. Cook over low heat until spinach is just wilted. Add eggs and scramble until eggs are set.
- Sprinkle with cheese and serve with salsa, if desired.
