Grilled Tuna w/Fresh Mango Salsa

Ingredients
  • 2 tablespoons lime juice
  • 1 teaspoon olive oil
  • 4 (4-ounce) tuna steaks
  • Vegetable Cooking spray Fresh Mango Salsa 2 cups plum tomatoes, seeded and diced 1½ cups diced peeled ripe mango ¼ cup finely diced red onion ½ cup chopped fresh cilantro 2 tablespoon fresh lime juice 1 tablespoon cider vinegar 1 teaspoon sugar ½ teaspoon salt ½ teaspoon black pepper 2 cloves garlic, minced
  • 2 cups plum tomatoes, seeded and diced

  • 2 cups plum tomatoes, seeded and diced
  • 1½ cups diced peeled ripe mango
  • ¼ cup finely diced red onion
  • ½ cup chopped fresh cilantro
  • 2 tablespoon fresh lime juice
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cloves garlic, minced
Instructions
  1. Combine lime juice and olive oil; brush on tuna.
  2. Coat grill rack with cooking spray; place on grill over medium-hot coals.
  3. Place tuna on rack, and cook, covered, 5 minutes on each side or until done.
  4. Serve with Fresh Mango Salsa.
  5. Combine first 7 ingredients of Mango Salsa. Stir in ½ teaspoon salt,1/2 teaspoon pepper, and garlic.
  6. Cover and chill thoroughly
