1 head leaf or Bibb lettuce leaves, rinsed, dried and torn into bite-sized pieces
English cucumber, diced
1 pint cherry tomatoes, halved
cup chopped peanuts
Instructions
Cook steak on grill over high heat for approximately 4 to 6 minutes on each side,
until it is cooked medium (don’t overcook!). Remove from heat and slice into thin strips; set aside.
In large bowl, stir together green onions, cilantro, mint leaves, lime juice, fish sauce,
chili sauce and sugar until well blended and sugar is dissolved. Add meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
Place lettuce in salad bowl. Arrange diced cucumber on top of lettuce, and then pour meat and sauce over all. Top with cherry tomatoes and peanuts; serve immediately.
