4 chicken breast halves, pounded to even thickness
2 cups cornflakes
¼ cup butter
1 teaspoon salt
½ teaspoon pepper
Instructions
Sprinkle chicken evenly with salt and pepper; set aside.
Place cornflakes in plastic zip-lock bag. Crush gently with rolling pin: set aside.
Melt butter in microwave-safe bowl. Dip chicken then place one at a time into bag with cornflake mixture. Shake gently and place in a 9X13-inch Pyrex dish.
Sprinkle remaining cornflakes from bag over chicken.
Bake uncovered at 375 degrees for 30 minutes or until chicken is tender.
