Ingredients
  • 2 medium red potatoes (or 1 large sweet potato), chopped
  • 2 ears corn, cut into 1-inch disks
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2-3 cups chopped vegetables (zucchini, asparagus, green beans, etc.)
  • 1 pound chicken sausage, chopped into coins
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • Garnish with fresh parsley
Instructions
  1. Preheat grill to medium-high heat (around 400 degrees F).
  2. Place potatoes on a plate, cover with a wet paper towel, and microwave for 3-5 minutes. Or, place potatoes in a pot, cover with water, bring to a boil and cook for 5 minutes, then drain.
  3. Combine potatoes, corn, onion, bell pepper, garlic, chopped vegetables and sausage in a large bowl. Toss with olive oil, paprika, oregano, salt and pepper.
  4. Divide mixture onto 4 sheets of heavy-duty tinfoil. Fold in edges of tinfoil to create a little boat. Place another sheet of tinfoil on top of each campfire dinner and roll in edges to form a secure encasing. Place each bundle on hot grill. Cover and grill for 20-25 minutes, checking every 7 minutes, until vegetables are tender.
  5. Remove from grill and garnish with fresh parsley. Serve immediately!
