The most perfect Valentine's Treat!
Ingredients
  • 1 ½ cups skim or 1% milk (can use almond milk)
  • ¾ cup plain nonfat Greek yogurt
  • ⅓ cup chia seeds
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • 1 pinch salt
  • ¼ cup blood orange juice
  • ⅓ cup sugar
  • 1 blood orange, segmented and chopped
  • 1 Cara Cara orange (or navel orange), segmented and chopped
  • 2 ounces dark chocolate, chopped
  • ¼ cup sliced almonds, toasted
Instructions
  1. In a large bowl, whisk together milk, yogurt, chia seeds, honey, vanilla paste, and salt until well combined. Cover bowl with plastic wrap and place in fridge to chill and thicken for at least 2 hours (or overnight).
  2. While pudding thickens, heat orange juice and sugar in a saucepan over medium heat. Stirring constantly, bring mixture to rolling boil for 2 minutes. Turn off heat and allow syrup to cool to room temperature.
  3. Just before serving, portion pudding into 6 cups. Top each serving with orange segments, chocolate, toasted almonds, and a drizzle of blood orange syrup.
